Dealing with a picky eater is just one of the many joys of parenthood. Luckily, parents are pros at enticing even the pickiest of eaters. By disguising a little healthy into some of your little one’s unhealthy favorites, parents and kids can both win at mealtime.
Preheat oven 350*. Combine ground chicken and rest of the ingredients, saving the 1 cup of breadcrumbs for dredging. Mix well and refrigerate 20 minutes. Use a melon baller to portion out the nuggets and pat down into the shape of a circle. Then pat the nugget in the breadcrumbs and place on a cookie sheet. Spray with olive oil to lightly coat and cook 10 minutes. Turn nuggets and cook another 5-7 minutes until the patties are firm and done.
*tip, if nuggets are too squishy to form into balls, try popping them in the fridge for 30 minutes prior to molding.
