Most parents would agree that some extras Z’s on the weekend is one of the best gifts there is to offer. This Father’s Day we’re topping that precious morning gift of sleep with an awesome LumberBee Breakfast in bed. Pair this healthy and fresh take on hash browns with Dad’s favorite eggs or pancakes to ensure he wakes up seeing life through honey colored lenses! Added bonus – shredded sweet potatoes, shredded zucchini and coconut oil make this hash brown dish not only delicious but also delightfully nutritious!
LumberBee Breakfast Hash Browns
Sautee the shredded zucchini and sweet potato in coconut oil until vegetables are tender and beginning to crisp (about 5 minutes). Make sure to stir the vegetables periodically so as not to char them. Add the salt and pepper and continue simmering. At the last minute, add a dash of your favorite hot sauce and stir to incorporate. Take hash browns off the heat, add a sprinkle of fresh parsley, stir to incorporate and plate.
